Please help us welcome Josh Perez as the new bar manager and lead mixologist at Tapastry Restaurant and ON Bar in Paso Robles. For over six years now he has had the pleasure of being able to work and serve his hometown of SLO county in the restaurant and wine industries. Josh’s first experience in the industry was at Roberts and Estrella, two sister restaurants located in the downtown area of Paso Robles and a second Roberts location in Arroyo Grande. There he worked for a number of years as a lead server and supervisor gaining valuable experience and establishing great friendships with guests and coworkers alike. Josh next worked in the wine industry as a vineyard technician for Justin Vineyards and Winery and also as a marketing assistant for Opolo Vineyards.
While going back to school full-time, he made the decision to re-enter the restaurant industry and that is when he found a passion for bartending and mixology. As a bartender for both Nino’s in Templeton and also Thomas Hill Organics in San Luis Obispo, Josh would find a new love and interest in all things wine, beer, and spirits. While focusing on the bar and cocktail program at Nino’s, he would conduct training for bar staff as well as provide cocktail knowledge and also develop signature cocktail menus for the restaurant.
Upon learning that Nino’s owner Steve Nino had just purchased the old Villa Creek restaurant location, he was very excited and eager to become a part of it’s well-established history within the Paso Robles restaurant industry and its vast potential to be a great spot on the park once again. In March of 2018 Steve Nino opened up his second restaurant ON Bar where he would have the privilege of once again working in the downtown area of Paso Robles serving my hometown community and all its visitors.
As the ON Bar location continues to move forward and progress, Josh is happy that we will now be welcoming the new Managing Partner Chef, David Clawson and Chef de Cuisine Brianna Sammut, as we introduce the new small plate part of the restaurant, Tapastry. As we collaborate together to combine food, wine, beers, sake and craft cocktail’s, we look forward to seeing you very soon!
